Vegas Vacation

Time is drawing near with our trip to Vegas on July 1st. We are so excited, but haven't started packing or even thought about packing. We are still planning what we are going to do when we are there. For example we are thinking of taking a sight seeing cruise on Lake Mead, which is the largest man made lake in the country.

Coincidentally when we were planning our Vegas trip we found out that my sister will be there, my dad will be there and my brother will also be there for a couple of days. I don't think we could have planned it better if we tried. And of course we will take plenty of pictures to share.

Vegas Bound


One week and counting. Counting down to our trip to Vegas come July 1st. I am so looking forward to some one on one time with my beautiful wife. Thai Chicken Wings

Hi all you chicken wing lovers, if you really love wings then you've got to try these. I am a big chicken wing fan because they are such a versatile food. There are so many recipes and so many different ingredients that can be used when preparing wings. I bet there are so many chicken wing recipes out there that you could have a different recipe for several months with out having the same one twice. And if you are really into Thai food you will really love this recipe. The crushed garlic, jalapeno peppers and paprika really give these wings a unique flavor and a nice kick. So give it a try like I did and tell me what you think.
By the way, here's a secret. Some recipes are even better the day after because the ingredients really get a chance to marry and infuse together with the meat.


INGREDIENTS

5 pounds frozen chicken wings
1 cup chicken broth
1/2 cup white sugar
1/4 cup fish sauce
1/4 cup crushed garlic
1/4 cup finely chopped jalapeno chile peppers
2 tablespoons cornstarch
3 teaspoons paprika
1 tablespoon olive oil

DIRECTIONS

1 - Preheat oven to 400 degrees F (200 degrees C).

2 - Place chicken wings on a non-greased cookie sheet. Bake in the preheated oven for 45 minutes to 1 hour, turning once, until golden brown. Move to serving dish/platter.

3 - In a medium skillet saute garlic and jalapeno peppers in olive oil until soft. Add chicken broth, fish sauce, paprika and sugar. Add cornstarch and let thicken. Stir all together and pour over crispy chicken wings. Enjoy!

I Joined Social Spark, So Should You

Hey fellow bloggers, I just signed up Social Spark. I started blogging about six weeks ago at the urging of my wife. I use to see her on the computer for hours but didn't understand her fascination with the whole blogging thing. She seemed to be having a lot of fun and of course the extra money wasn't bad either.

At first I resisted her invitation to join the blogosphere, but eventually gave in to her urges. My wife suggested that I join Social Spark and I did. I joined because it was another avenue for me to meet other people, exchange ideas and of course add to my multiple streams of income.

Another reason I joined social spark is because it gives you the opportunity to get ideas on blog ideas because you know your mind draws a blank sometime. Everyone needs a mind jump start sometimes to get those creative juices flowing. Ginger Orange Glazed Chicken Wings


INGREDIENTS
1/2 cup frozen orange juice concentrate, thawed and undiluted
3 tablespoons fresh lemon juice
1/4 cup hoisin sauce
1 tablespoon vegetable oil
1/4 cup sugar
3 tablespoons minced peeled fresh ginger
3 cloves fresh garlic, minced
2 pounds chicken wings
3 medium green onions, thinly sliced


DIRECTIONS

1. In a large, resealable bag, mix the orange juice concentrate, lemon juice, hoisin sauce, vegetable oil, sugar, ginger, and fresh garlic. Add chicken wings, seal, and shake to coat evenly. Refrigerate overnight.

2. Preheat oven to 400 degrees F (200 degrees C). Line a large baking sheet with aluminum foil.

3. Spread wings on foil with marinade, and bake for 45 minutes, until brown and shiny. Transfer to serving platter, and garnish with green onions.

Malaysian Barbecue Chicken Wings

If you love wings like I do, you will love these. So, try these wings and tell me what you think.


INGREDIENTS

12 chicken wings
4 tablespoons soy sauce
2 tablespoons dark soy sauce
1 tablespoon sesame oil
2 tablespoons oyster sauce
1/2 tablespoon garlic powder
1/2 teaspoon onion powder
ground black pepper to taste
1 tablespoon dried basil

DIRECTIONS

1. In a shallow glass bowl combine the soy sauce, dark soy sauce, sesame oil, oyster sauce, garlic powder, onion powder, ground black pepper and dried basil. Mix together. Add chicken wings, cover and refrigerate overnight. Stir together again the next day.
2. Lightly oil grill and preheat to high heat.
3. Remove wings from marinade and discard remaining marinade. Grill chicken wings over preheated grill for 8 to 12 minutes each side, or until cooked through and juices run clear.

Employment Applications

It always amazes me when people come to me looking for a job and hand me their application. Let me back up, a so called application. People need to be aware that an application is a window into their employment history, educational history and job qualifications.

Out of all the applications that I receive on a daily basis 99.8% of them are filled out incorrectly. Meaning that they are not completely filled out:

• Missing employment dates
• Missing employers’ information
• Missing job duties
• No contact phone numbers
• Application is not legible

These are the most common missing information on applications. So if you are looking for a job and are filling out your application, make sure it is filled out completely. If something does not apply to your situation please put N/A (Not Applicable), this shows that you pay attention to details. If you can’t completely fill out an application take it home with you and get someone to help you fill it out. You only get one chance to make a good first impression. Make the best first impression you can possibly make, it could be the difference between an employer even looking at your application.

Radio Disney Summer Concert Series

Summer vacation is here and kids are out school or will be in the next week or so. What will you do this summer? Will you fly or will you drive to your family’s summer destination?

Swimming Fun

Well I took my little guy swimming today, two times. He has some new moves in the pool; he does the "Dolphin Kick" and the “Mermaid". He is swimming across the pool, underwater, on top of the water and he just runs and jumps in with no fear.

Every time he sees someone new at the pool he has to go show of his new moves. Then he starts talking to them so their attention will be on him. He is a big attention horde. He has this bad habit of running and jump in the pool right next to someone, although the whole pool is empty. I keep telling him to give the people room, but I don't think he quite gets it yet.
